I believe the joke here is that wanting a pre-nup (even a simple one) is supposedly incongruous with the idea that she is a simple girl. I think we are supposed to assume that a simple girl wouldn’t even think of a pre-nup: she would just want to get married.
I think that fj has the desired interpretation. But the person who wants a prenup
is generally the rich one. To me that seems incongruous with being “a simple girl”.
As I see it, she is a simple girl. Just a simple pre-nup that get’s her some easy dough and avoids that messy divorce and any (potentially costly) custody battles.
She could be the one with the money, and downplaying that she wants a prenup by prefacing it with the statement that she’s just “a simple girl”. Kind of like when someone starts a statement with, “I don’t like to complain, but…” or “I’m not picky but…”, and then really lets loose.
Maybe she’s a simple girl like the one in The Importance of Being Earnest, who said something like “It’s just the diary of a simple girl, and therefore intended for publication. I do hope you will purchase a copy when it comes out in volume form.”

From a Carry On movie:
“I’m a simple woman with simple tastes. I just want to be wooed.”
“Oh, be as wude as you like!”

Sometimes a pre-nup is suggested by the “poor” one, to prove that they’re in it for love and not money.

Yes, well, what’s mine is yours (and of course…)
