I've heard a bathroom called a lot of things before (loo, water closet, great white telephone, crapper, can, Jimmy's office, etc.), but never a "head". Is that a British thing or an American thing?
The job title isn't entirely made up. If you watch the credits after any movie, you will likely see the words "key grip" come up. I wasn't sure what they do either. Mark in Boston's post at least partially answers that question.

I think Boston Mark nailed it. The "Head Key Grip" title *is* made up, because the job is made up. The joke is that Monty was misled to expect a "real" job on the set (like the Key Grip) but instead only gets to grip the keys to the head.

No, the Key Grip and the Head Key Grip are two different things. There's certainly a Key Grip around somewhere (the person in charge of all the people who move things around on the set). The producer made up a completely new job title just for Monty. Maybe a better setup would have the producer hiring Monty because of a favor he owed to someone, and saying to Monty "I have a position for you. A VERY important position. In fact this is the MOST IMPORTANT job in this whole project. You will be the Head Key Grip. Now go do your job and don't come near my office again."

As I said, I get the joke. But in order to make it he had to make up a fake job title.

Patrick - "Head key grip" is just sloppy writing. The joke is "key grip = guy who grips the (bathroom) keys." That is, washroom attendant. Lucky him.

Jackson Pollack using cephalopod ink to sign a book of his works makes perfect sense to me. Unusually education cartoonin', but then we're not agin' smart people in this fine nation.

Wait....

I get the joke, by the way (head = bathroom), but the cartoonist had to make up the job title to set up the joke. To me, that's kind of lame.

I'd just like to point out that "Head key grip" is redundant.
